If you are a regular here, you know that I am no stranger to a good Tex-Mex meal. In fact, you could say I’m obsessed with them. (Hello – I just called myself a taco addict less than 2 weeks ago!) So it’s obviously no secret that I get a little bit excited about a day that I can dedicate to all things Mexican/Tex-Mex – Cinco de Mayo!!

But the question is – what to make? I started thinking about a something that I could make that my whole family would love. Or something that would make a great appetizer for if you are entertaining. (Any excuse for a party!) Oh, how I love a good Cinco de Mayo party! If it were up to me, we’d throw a big party every year – just as an excuse to get friends and family together.

I love, love, love all of the regulars – tacos, enchiladas, burritos – but sometimes, you want to switch things up a bit. This year, I’m thinking this 7 Layer Flatbread Recipe is just the ticket.

We all know that 7 Layer Dip is one of the most popular appetizers out there. For good reason. It’s delicious! And it seems to be the first thing to go. So I decided to take that famous dip and turn it into something a little bit more.

So, you can look at this 7 Layer Flatbread Recipe in a couple of different ways. I thought it would be fun to have all of the toppings out and let everyone build their own flatbread for dinner. That way, everyone gets only the toppings they love. And since the flatbread is served at room temperature, it’s super easy to set out buffet style.

The other option is to prepare the flatbread and cut it into appetizer sized slices to add to your appetizer spread. You really can’t go wrong with either option!

I’m going to be honest and say that I don’t know what the “real” 7 layers are supposed to be in 7 layer dip (or now this 7 Layer Flatbread Recipe!) because mine always ends up with more than 7 layers. Which is totally ok by me. It’s also great because you can adapt it to your likes or what you have on hand. Turn the avocados into guacamole. Add onions or jalapeños or roasted peppers. The sky is the limit!

All I know is that this is how I want to celebrate this year!

Ingredients

  • 2-4 flatbreads or naan
  • 1 16 oz can Old El Paso Traditional Refried Beans
  • 1 8 oz package cream cheese, softened
  • 1 1 oz package Old El Paso Original Taco Seasoning Mix
  • 8 oz sour cream
  • 8 oz salsa
  • 2 cups shredded lettuce
  • 2 cups 8 oz shredded cheddar cheese
  • 1-2 avocados sliced
  • 1 large or 2 small tomatoes chopped
  • 1 green bell pepper chopped
  • 1 2.25 oz can sliced black olives, drained
  • cilantro

Instructions

  • Preheat the oven to 400ºF. Place the flatbread on a baking sheet and bake for 2-3 minutes to warm through.

  • Heat refried beans in a 1-quart saucepan over low heat, stirring occasionally, until heated through.

  • Combine the cream cheese and the taco seasoning in a medium bowl and beat until smooth. Stir in the sour cream.

  • Spread a layer of beans on each flatbread. Top with a layer of the cream cheese mixture followed by the salsa. Layer the remaining ingredients on top - lettuce, cheese, sliced avocados, tomatoes, bell pepper and olives. Sprinkle the cilantro over the top.

  • Cut the flatbread into slices to serve.
