Funfetti Cake Batter Cookies are sensational. I was looking through my Pinterest boards the other day to see if I could find a cookie with rainbow sprinkles in them and I found this quick and easy recipe. I loved the idea of using a whole cup of jimmies in a batch of cookies. Not only that, this recipe uses a boxed cake mix making it all the easier. Basically, this is like a sugar cookie with a whole lot of sprinkles thrown in!

I make a few recommendations for improvement to this recipe. I decreased the oil from 1/2 cup to 1/3 cup. The difference means the cookies come out full and puffy rather than a little flat. This is actually my second batch of this recipe.
My first one turned out a lot flatter than I would have liked. One other suggestion is that you use only jimmie sprinkles and not nonpareils. If you use nonpareils they will color the cookie dough–usually lavendar! I also increased the amount of vanilla in the recipe which makes the taste just pop!
If you love funfetti-confetti-sprinkles in frostings for cakes, cupcakes, and cookies, you will love them in actual cookie batter too! These lovely cookies are so easy to whip up. You can have a batch ready for the oven in 5 minutes. Yeah, you heard that right. While the original recipe suggests a bake time of 10 minutes, mine actually took 12 minutes. These cookies are ready to serve in under 20 minutes. Wow!

When I initially posted this recipe in March 2013, I was still using an iPhone for a camera so my photos weren’t as crisp and clear as I would have liked. I recently remade these cookies (January 2016) for friends and reshot the pictures. These cookies smell amazing after they’re cooked. My kitchen had such a wonderful fragrance. Here’s what I did.
I used these ingredients.
Add baking powder to cake mix. Stir to combine.
Addeggs,vanilla,oil and sprinkles.
Stir ingredients to combine.
Scoop the cookie dough with a small cookie scoopand place on cookie sheets sprayed with cooking spray.
Bake at 350 for about 12-13minutes. You probably need to keep an eye on your timer and keep checking your oven regularly so you don’t overbake the cookies.These cookies puffed up beautifully and didn’t flatten out.
Funfetti Cake Batter Cookies are great for baby showers – the colors match any theme.

Ingredients
- 15 oz. box French Vanilla Cake Mix
- 1 tsp. baking powder
- 2 large eggs
- 1/3 cup canola oil or use coconut oil or avocado oil
- 1 tsp. real vanilla extract
- 1 cup Rainbow Jimmies sprinkles NOT nonpareils
Instructions
Preheat oven to 350°.
In a large bowl, mix together the cake mix and baking powder.
Add the eggs, oil, vanilla and sprinkles and mix again until ingredients are very well combined.
Scoop with a small cookie scoop and place on a cookie sheet that has been sprayed generously with cooking spray.
Bake for 12-13 minutes.
Rotate cookie sheets on oven racks half way through baking time.
Cool.

NOTE:I decrease the amount of oil slightly in this recipe because my first batch turned out a little flat. This batch turned out a lot better.
NOTE:If you use nonpareils rather than jimmies the color bleeds into the cookie dough and you will have a lavender-colored cookie instead.
